These days Chilli Cheese Toast has regained its popularity with places like Dishoom in London and Edinburgh serving it on their menus. You might think I keep harping about flavour combinations, but cheddar cheese with spring onions and green chillies is like a match made in heaven. The saltiness of the cheese is cut with the sharp spicy notes of the chilli. And the spring onions just add the right crunch to this otherwise cheesy toast.
I normally make Chilli Cheese Toast for breakfast or brunch. But on long wintry evenings, nothing is better than soup and toast. Having a dinner party at home, Chilli Cheese Toast serves as the perfect canapes to go along with drinks. A truly versatile recipe.

- 4 Bread Slices Preferably white, but feel free to use any type of bread
- 2 spring onions finely chopped
- 1 green chilli finely chopped
- 2-3 tbsp coriander leaves and stems, finely chopped
- 1 cup cheddar cheese grated, use a strong cheddar cheese
- Salt to taste
- Pepper to Taste

- Heat the grill to medium.
- In a bowl, add the grated cheese, chopped spring onions, green chillies, chopped coriander and mix everything well.
- Sprinkle some salt and a little pepper into the mixture, and give it all a toss.
- Take the slices of bread and sprinkle the cheese mixture liberally over the bread slices.
- Grill the slices of bread until the cheese has melted and slightly brown.
- Serve hot with ketchup or with coriander chutney
This is my personal fav. Good ans easy one to make from bfast!!
