⚡️This creamy Penne Pollo picante is what comfort food dreams❤️ are made of!⚡️

Olive oil - 1 tbsp
Chicken breast- 2, cut into bite sizes
Paprika - 1.5 tsp
Oregano - 1 tsp
Salt & Pepper - to taste
@belazu_co Rose Harissa - per taste and how spicy you like it
Single cream - half pot
Tomato medium sized - 3, halved then halved again
Cooked Pasta of choice - 125 gm per person, I used penne

Heat olive oil, add chicken, paprika, oregano, salt and pepper. Pan roast until browned.  Bring water to boil in another pot. Once water has come to the boil, throw in pasta and cook as per instructions. Transfer cooked chicken to a bowl. In the same pan, add spoonfuls of the harissa paste and pour in the single cream. Stir to make a sauce. Add in the tomatoes, put the lid on and cook for a couple of minutes. It’s ok for the tomatoes to have a bit of bite. Now add the cooked chicken and the cooked pasta. Stir to coat the pasta and chicken with the sauce. Season if required. Serve hot! Bon appetit baby!👩🏻‍🍳

⚡️Lunches can be hard to plan, but this Garlic ⚡️Lunches can be hard to plan, but this Garlicky Fried rice needs no prep at all! ⚡️

Oil - 1 tbsp
Chopped garlic - 2
Spring onion chopped - 2
Carrot chopped - 1
Handful of green peas 
Cooked(ideally stale) rice - 1 cup
Soya sauce - 1 tsp
Season to taste
Top with sriracha

Heat oil, add garlic and spring onions. Sauté on high flame. Throw in carrots and green peas. Don’t fully cook as veggies will taste good with a bit of crunch in them still. Add the cooked rice. Sauté. Now the soya sauce and toss everything together for 5-6 mins . Serve in a bowl and top with some sriracha. I like my rice hot - so more sriracha for me. Enjoy it hot!

Olive Oil - 2 tbsp
Chopped garlic - 2
Larger onion chopped - 1
Yellow pepper - 1
Oregano - 1/2 tsp
Paprika - 1 tsp
Can of chopped tomatoes - 1 can
Season to taste
Large aubergine sliced - 1 ( you can pan roast them if you have the patience)
Grated cheddar/Parmesan - 2 handfuls
Mozzarellas sliced - 1 small ball

Heat olive oil, add garlic and onions. Sauté till translucent. Sprinkle oregano and paprika. Throw in the yellow pepper. Sauté. Add the tinned tomatoes. Cook for 10 mins with lid on. Preheat oven to 200C. In a casserole, layer aubergine slices with a layer of the tomato pepper sauce, top with a handful of grated cheddar/parmesan. Repeat the process once again and finally top with mozzarella slices. Place the casserole in the oven for 20 mins and serve hot with steamed veggies.

Sometimes I take shortcuts, and they turn out to be good decisions 😁 by chance

For #11daysofdal, I wanted to use up some Rajma ( red kidney beans) but didn’t quite want to make Rajma masala. I ended up mashing some tinned ready-to-eat Rajma, with 2 boiled potatoes, crushed ginger, garlic and green chilli, dry mango powder and salt. This amazing mix first made the squishiest, tastiest cutlets. But I couldn’t stop at that , could I?! After reading @arun_rag post, I applied this bean mix onto 2 seeded bread slices and generously sprinkled some crunchy cheddar cheese. Under a hot grill for 7 mins, and these beany chilli cheese toasts were ready to be devoured.

Listening to @rushinamg about #daldivas and #11daysofdal got me super excited, well to a point that this Palak Dal was ready in 30mins! No thinking of what ingredients went into it but I knew it had to be a combo of Toor and Moong Dal today. This combination of daal along with the tempering of cumin seeds, black mustard seeds, asafoetida, turmeric, red chilli powder against the soft caramelised onions and slushy tomato was the perfect winter warmer on so many levels. A lovely lunch recipe, that’ll taste even better for dinner.

1/2 cup toor Dal
1/2 cup Moong Dal
Wash the dals and set aside
In a large stockpot or pressure cooker, heat 2 tbsp oil
Add in cumin seeds, black mustard seeds, smashed - 1/2” ginger + 3 garlic pods + 1 green chilli
Add 2 chopped onions, pinch of salt, saute
Add 2 chopped tomatoes, stir
Add 1 tsp turmeric powder and 2 tsp red chilli powder, stir
Add in 3 handfuls of chopped spinach, wilt spinach
Add in washed dals and 2.5 cups of water
Season and cook dals until soft and mushy
In the pressure cooker, 4 whistles and your daal is ready
Add in more water for a soupy consistency and season as per taste
Serve piping hot with some ghee ( a lot)

I also tried out @sagunabaug ’s Kadipatta chutney, absolutely loved it, nutty, warming, and an explosion of flavours. Saguna Baug has a store named The Farm Shop in Thane @sagunafarmfresh , which I happened to stumble open on my last India trip. They stock some really amazing products from their very own eco-friendly farm. To name a few there was this incredible Santra (Orange ) Srikhand which was delicious 😋 pickles, chutneys, flour mixes, fresh vegetables, plants and all natural beauty products. I cannot wait to go back 😀 and try out more from their store
