Sometimes I take shortcuts, and they turn out to be good decisions 😁 by chance

For #11daysofdal, I wanted to use up some Rajma ( red kidney beans) but didn’t quite want to make Rajma masala. I ended up mashing some tinned ready-to-eat Rajma, with 2 boiled potatoes, crushed ginger, garlic and green chilli, dry mango powder and salt. This amazing mix first made the squishiest, tastiest cutlets. But I couldn’t stop at that , could I?! After reading @arun_rag post, I applied this bean mix onto 2 seeded bread slices and generously sprinkled some crunchy cheddar cheese. Under a hot grill for 7 mins, and these beany chilli cheese toasts were ready to be devoured.

The most delicious ❤️Strawberry Preserve ❤️from @nativetongue.in , so impressed with this preserve! This preserve is made with handpicked strawberries and Keralan Vanilla - the kind of vanilla that gets your senses perked up just as you open the bottle! Listening to @rushinamg about #daldivas and #11daysofdal got me super excited, well to a point that this Palak Dal was ready in 30mins! No thinking of what ingredients went into it but I knew it had to be a combo of Toor and Moong Dal today. This combination of daal along with the tempering of cumin seeds, black mustard seeds, asafoetida, turmeric, red chilli powder against the soft caramelised onions and slushy tomato was the perfect winter warmer on so many levels. A lovely lunch recipe, that’ll taste even better for dinner.

1/2 cup toor Dal
1/2 cup Moong Dal
Wash the dals and set aside
In a large stockpot or pressure cooker, heat 2 tbsp oil
Add in cumin seeds, black mustard seeds, smashed - 1/2” ginger + 3 garlic pods + 1 green chilli
Add 2 chopped onions, pinch of salt, saute
Add 2 chopped tomatoes, stir
Add 1 tsp turmeric powder and 2 tsp red chilli powder, stir
Add in 3 handfuls of chopped spinach, wilt spinach
Add in washed dals and 2.5 cups of water
Season and cook dals until soft and mushy
In the pressure cooker, 4 whistles and your daal is ready
Add in more water for a soupy consistency and season as per taste
Serve piping hot with some ghee ( a lot)

I also tried out @sagunabaug ’s Kadipatta chutney, absolutely loved it, nutty, warming, and an explosion of flavours. Saguna Baug has a store named The Farm Shop in Thane @sagunafarmfresh , which I happened to stumble open on my last India trip. They stock some really amazing products from their very own eco-friendly farm. To name a few there was this incredible Santra (Orange ) Srikhand which was delicious 😋 pickles, chutneys, flour mixes, fresh vegetables, plants and all natural beauty products. I cannot wait to go back 😀 and try out more from their store

This is my #farmtofork story. Humble as it is, I’m proud of it. This plant is the Ajwain plant, a cutting was giving to me by a friend a few months ago I finally got to use it while making bhajiyas. I wish I could tel how crispy yet light it was. For now, this picture will have to do.

✨Coriander, Coconut and Tamarind Prawn Curry✨
Or
Hirwa - Green
Kalwan - A mixture or curry base
Prawns - Prawns
✨This Coriander Coconut and Tamarind Prawn curry is everything you can imagine. Spicy, sour, sweet, an explosion of flavours against the unique flavour of the prawns. If you’re a vegetarian, replace the prawns with sweet potatoes  and you’ll have yourself a delicious new curry to try out✨

💫Ingredients💫
.
For the paste:
Large bunch of coriander leaves + stems
2 cloves of garlic
1/2 inc of ginger
1 small onion, sliced
2 green chillies, tops taken off
Squeeze from a lemon
Grind the ⬆️above ingredients into a smooth paste
.
For the curry⏬
Heat 2 tbsp of oil
Once hot, add in 5- 6 curry leaves, roast gently
Now add in the ground paste and cook for a couple of minutes
Add in 250 gm of cleaned prawns, and season. 
Next in goes 400ml of coconut milk,  4 tbsp of tamarind paste, a sprinkle of sugar and a gentle squeeze of lemon. Cover and cook for 10 mins or you could also reduce the coconut milk to a thicker consistency.
Garnish with coriander leaves and serve with rice like I did
