Tilgulachi Poli is a sweet flatbread that is just perfect for those cold wintery evenings. A roti or flatbread which sandwiches a hidden core of roasted coconut, sesame seeds and jaggery, what’s not to love about it?
This dish is made during the festival of Makar Sankranti – a Hindu festival which marks the end of the winter period and the beginning of the new harvest season. I’m usually super happy to celebrate the festival considering it signals that spring is round the corner. End of Winter is where I stopped reading whilst chomping on these delicious and super addictive Tilgulachi Poli.
Sesame and jaggery should definitely be on your grocery lists during winter. They both help give warmth and retain it well in our bodies. They are also a great source of energy. A perfect dessert during the winters to ward off those colds and chesty coughs. This dish brings that perfect nutty sesame goodness to your winters.

To make the dough
- Mix both the flours in a bowl. Then add salt and the warm oil and mix well.
- Add milk to make a soft dough. A fair bit of kneading will be needed. You may need more or less milk to make a firm dough.
- Cover the dough and keep aside for about 30 mins or so, so it softens.
For the filling
- Heat the ghee in a pan.
- Add the grated coconut, sesame seeds and gram flour and roast for a couple of minutes on medium heat.
- Remove from heat and cool.
- Grind in the grinder to make a coarse paste.
- Now add the grated jaggery, cardamom powder and khuskhus and mix well to make the filling.
Making the polis or flatbreads
- Heat a flat pan and add some ghee to it and spread
- Divide the dough into small lemon side balls.
- Using a rolling pat, roll the dough ball to make a small disc.
- Add a teaspoon of the filling into the centre of the disc, cover the filling with the sides of the dough.
- Roll into a small roti.
- Add the roti onto the heated pan. .
- Roast the flatbread on both the sides until brown.
- Apply ghee on both the sides and cook till slightly browned.
- Serve warm with spoons of warm ghee.
