Sesame, coconut and Jaggery Flatbread

Recipe Notes

To make the dough

  1. Mix both the flours in a bowl. Then add salt and the warm oil and mix well.
  2. Add milk to make a soft dough. A fair bit of kneading will be needed. You may need more or less milk to make a firm dough.
  3. Cover the dough and keep aside for about 30 mins or so, so it softens.

For the filling

  1. Heat the ghee in a pan.
  2. Add the grated coconut, sesame seeds and gram flour and roast for a couple of minutes on medium heat.
  3. Remove from heat and cool.
  4. Grind in the grinder to make a coarse paste.
  5. Now add the grated jaggery, cardamom powder and khuskhus and mix well to make the filling.
 

Making the polis or flatbreads

  1. Heat a flat pan and add some ghee to it and spread
  2. Divide the dough into small lemon side balls.
  3. Using a rolling pat, roll the dough ball to make a small disc.
  4. Add a teaspoon of the filling into the centre of the disc, cover the filling with the sides of the dough.
  5. Roll into a small roti.
  6. Add the roti onto the heated pan. .
  7. Roast the flatbread on both the sides until brown.
  8. Apply ghee on both the sides and cook till slightly browned.
  9. Serve warm with spoons of warm ghee.
