Since the beginning of the lockdown due to coronavirus, I’ve realised the time and effort I am putting in everyday for all our meals, 3 meals and then some snacks. I’m sure we’re all realising the effort that goes into planning what to make with the ’sometimes limited’ ingredients we may have in our store cupboards, freezers and fridges. But also for these meals to be healthy or at least healthy-ish. Then I think of how easy all these decisions were only a few weeks ago. Picking up a porridge or an egg pot from the likes of Pret or picking up that rice box from LEON or Teriyaki Salmon pot from Itsu. That’s when it hit me, why don’t I recreate meals that I usually buy so easily?

If you had to recreate a dish that you always buy from the shops for lunch, what would it be? From me it had to be Teriyaki Salmon inspired from the ITSU rice boxes. The meal boxes and the sushi are really healthy and with Salmon you just cannot go wrong. Packed rich with Omega 3 fatty acids and a power source of protein, this dish is full of goodness and of course is super tasty.
I tend to serve my version of the Teriyaki Salmon with roasted veggies, spring onions and steamed asparagus. But you could get really creative with it, serve it on a bed of sticky rice or noodles sautéed with some veggies.

The star of this dish is the marinade, made with dark soy sauce, rice vine vinegar, a dash of sugar , salt, diced ginger and garlic. And that’s it really.

- 2 medium Salmon fillets
- 3-4 tbsp dark soy sauce
- 1 tsp rice vine vegar
- 2 cloves garlic finely chopped
- 1/2 inch Ginger finely chopped
- 1/2 tsp honey
- Salt to taste
- 1 tbsp Oil
- 8 asparagus tips
- 2 spring onions finely chopped

- In a bowl, add the soy sauce, rice vine vinegar, diced ginger-garlic, honey and mix thoroughly. Season with salt accordingly.
- In a deep dish, take the salmon fillets, and make some cuts to it, this is so that the salmon soaks in the marinade.
- Now pour the marinade all over the salmon. cover and refrigerate for about 20-30 mins.
- Heat oven to 200C and oven cook the salmon for about 20 minutes. Apply some drops of oil on the salmon before cooking.
- Serve the salmon with asparagus and spring onions and optionally with sticky rice.
