Its funny to imagine that although I grew up in the coastal city of Mumbai, I only ate my first fish dish when I came to the UK. Fish and chips was the perfect comfort food and almost seemed like a treat on cold rainy days. And it was then that my love affair with fish started, especially with this lemony breaded Salmon recipe.
Today my fridge is always stocked with my family firm favourite – salmon. And this dish is perfect for a mid-week quick and easy meal. It is extremely satisfying and the flavours compliment the salmon so well.
Serve this lemony breaded salmon recipe with asparagus, roasted sweet potatoes or potatoes. You can also get creative by mixing the different vegetables to create a veggie traybake. I tend to use courgette, red peppers and sweet potatoes.
I tend to serve the salmon and veggies with a quick and easy Sriracha yogurt/sour cream dipping sauce, Simply add a a teaspoon full of Sriracha to 4-5 tablespoons of greek yogurt or sour cream. Mix this thoroughly and you have a delicious dipping sauce.
