This weekend was delicious, I not only ate some incredible food, but also saw Yotam Ottolenghi’s award -winning Mediterranean Island Feast TV show. Over the years of watching his shows, I have become familiar with some rather interesting and flavourful ingredient combinations. One such that I tried recently was roasted Figs and Goats Cheese with a honey dressing.

Well if you have not tried this yet, then you are seriously missing out. It is such a quick and easy dish to make and goes perfectly well with a cheese board or with just wine.

You are literally using three ingredients! – Figs, Goats cheese and some good quality honey. Additionally if you really want to dress this dish up, you could even use Serrano ham and some thyme.

Roasted figs and goats cheese is like a marriage made in heaven – well food heaven. Sharp goats cheese against the sweet grainy and mushy texture of figs works like the perfect contrast.

- 2-4 fresh figs stems removed and slice half lengthwise
- 50-60 gms Goats cheese
- honey
- 1 teaspoon Lemon juice
- 1-2 slices Serrano Ham optional
- 1 sprig fresh thyme optional

- Preheat an oven to 180°C.
- Take some goats cheese and sandwich it into the fig. (Add a thin slice of Serrano Ham and a thyme sprig as well - optional)
- Roast the figs on a baking tray in the oven for about 15 mins.
- In a bowl, take the honey and squeeze some lemon juice into it and mix well.
- After 15 mins in the oven, drizzle the figs with the honey dressing.
- Plate the figs and enjoy.
