Everyone has a recipe that they are proud of. I am most proud of this Everyday Chicken Curry recipe. This is a recipe I put together based on the staple spices that are part of my spice box.
This Everyday Chicken Curry recipe is super easy to make with the usual Indian spices – coriander, cumin, garam masala or a chicken masala powder. Making this chicken curry makes me happy , especially after a busy long day at work. Served along with rotis or rice, it is perfect meal. A few sliced onions and lemon wedges will further enhance the flavour of the curry.

Ingredients
Chicken Marination
- 200-300 gms boneless chicken
- 3 tsbp Greek yogurt
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1 clove garlic finely chopped
- 1/2 tsp Ginger grated
- 1 tsp garam masala powder
Curry
- 2 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 green chilli Silt lengthwise and deseeded
- 1/2 tsp Ginger grated
- 2-3 cloves garlic finely chopped
- 2 large onions finely chopped
- 2 medium tomatoes finely chopped
- 1/2 tsp cumin powder
- 1 tsp coriander powder
- 2 tsp garam masala powder/Eastern Chicken masala powder
- 2-3 tbsp Greek yogurt
- Salt to taste

Recipe Notes
For the Chicken Marination
- Cut the chicken into bite size pieces.
- In a bowl, add the yogurt, turmeric powder, red chilli powder, cumin powder, coriander powder, ginger, garlic and garam masala powder.
- Make a smooth mixture and add in the chicken and coat the chicken well in the marinade.
- Marinate for atleast 15-20 mins in the fridge, preferably longer like 30 mins or 1 hour.
For the curry
- Heat oil in a pan, once the oil is hot add cumin seeds.
- Let the cumin seeds toast a little, then add in the turmeric powder, green chilli, garlic and ginger.
- Saute well.
- Now add in the onions and a pinch of salt. Mix everything together and let the onions soften and turn a little brownish.
- Now add in the tomatoes, mix and cover the pan with a lid and cook on medium heat for about 10 mins
- Stir everything occasionally so the tomatoes don't catch.
- When you start seeing the oil separate from the tomato and onions, you are ready to add in the marinated chicken.
- Add the chicken to the pan and stir to coat the chicken with the tomato and onions.
- Now add in some water so as to cover the chicken and stir well.
- Add the cumin powder, coriander powder and the garam masala/Eastern chicken masala powder.
- Season with salt as per taste.
- Mix everything well and cover the pan with a lid.
- Cook the chicken under tender. This should take about 15-20 mins.
- Stir occasionally and add spoons of the Greek yogurt and mix well again.
- Let the chicken curry cook for another 10 mins.
- Take off the heat, garnish with coriander.
- Serve hot with rotis or Cumin rice and julieenes of onions and lemon wedges.
