This Carrot and Peanut Salad with lemon is a quick and delicious salad. It is goes perfect with a simple rice and dal. The lemon juice adds a refreshing and tangy twist to the salad.
The grated carrots add a different texture to the salad, making it so much more tastier than chopped carrots. Crushed peanuts make this salad really moreish where the flavours compliment each other very well.
I usually serve this grated carrot & peanut salad with lemon alongwith rice and dal. When you have a salad like this, you don’t really need anything other curry.

Ingredients
- 3 carrots peeled and grated
- 1 green chilli de-seeded and chopped
- 2 spring onions cut fine
- 3 tbsp Roasted peanut powder coarse powder will do
- 1 lemon juice
- Salt to taste
- 1 tbsp Coriander leaves +stems - washed, cleaned and chopped fine

- Grate carrots and add to a salad bowl.
- Add finely chopped spring onions, chopped green chilli, crushed roasted peanut and lemon juice.
- Add salt to taste and tip in the chopped coriander leaves.
- Toss the salad so everything is mixed up well and serve.
