Masala Vermicelli with Peas

  • 1tbsp Oil
  • 1/2tsp cumin seeds
  • 5-6 curry leavesfresh, dried or frozen
  • 1/2tsp turmeric powder
  • 1 green chillifinely chopped
  • 1/2inch Gingerpeeled and finely chopped
  • 1 red onionpeeled and finely chopped
  • 1/2tsp coriander powder
  • 1/2tsp cumin powder
  • 1/2tsp garam masala powder
  • Pinch red chilli powder
  • 1cup vermicelli noodles
  • 1cup boiled waterboiled
  • Salt to taste
  • 2fistful green peasfrozen or fresh
  • Handful coriander leavesfinely chopped
Recipe Notes
  1. Heat oil in a pan, when hot add in the cumin seeds and let it splutter.
  2. Next add in the chopped green chillies, ginger and curry leaves along with the turmeric.
  3. Sauté for a minute, then add in the chopped onions and a little salt. Cook with the lid on for about 5 minutes.
  4. In the meantime in another pan, bring a cup of water plus some extra to the boil. 
  5. Once the onions turn soft, add in the vermicelli and salt to taste and stir to roast.
  6. Also add in the spices, coriander powder, cumin powder, garam masala powder and a pinch of red chilli powder. 
  7. Reduce the heat, and carefully pour the boiling water onto the vermicelli. Stir everything quickly, add in the green peas.
  8. Cover and cook until all the water has been absorbed by the vermicelli. It should take about a couple of minutes.
  9. Remove the lid, stir everything carefully. 
  10. Take off heat, garnish with coriander leaves and enjoy with a cup of chai.
