Ingredients
  • 250grams okratopped & tailed, cut into small pieces. Wash the okra first, dry them and only then cut them.
  • 3tbsp vegetable oil
  • 1tsp cumin seeds
  • 0.5tsp Asafoetida
  • 1medium white onionjulienned
  • 1tsp turmeric powder
  • 1.5tsp coriander powder
  • 1tsp red chilli powder
  • 1.5tsp mango powder or amchuroptional
  • 1tsp garam masala powder
  • Salt to taste
  • 1tsp corianderstem and leaves washed and chopped finely.
Recipe Notes
  1. Heat oil in a large pan. Once the oil is hot, add in cumin seeds and asafoetida.
  2. Once you can smell the toasted cumin seeds, toss in the onions, salt to taste, turmeric powder, red chilli powder, garam masala powder and coriander powder.
  3. Cook the onions for 5 mins.
  4. Add the cut okra into the pan and mix well.
  5. Cover the pan with a lid and cook until the onions caramelise and the okra is cooked.
  6. Add the dried mango powder and stir well.
  7. Cook further for another 10 minutes while keeping a close eye on the okra. You want the okra and onions to catch a little so the onions are caramelised a little and the okra are slightly browned.
  8. Take off the stove and garnish with the coriander leaves.
  9. Serve with warm rotis or with rice and dal.
