- Heat oil in a pan.
- Add cumin and all the whole spices, let the cumin seeds splutter.
- Add onions, ginger, garlic and green chillies. Mix and fry until golden brown.
- Add all ground spices, except garam masala, and salt. Stir for about a minute.
- Add tomatoes and fry until oil separates.
- Add mince (see notes below on how to make Soya Mince), combine with the rest of the ingredients and cook with a little water for about 15 mins with the lid on.
- Add peas and cook for few more minutes.
- Switch off heat, sprinkle garam masala and the chopped coriander leaves. Stir well.
- Serve hot with Pav or white/wholemeal buns, or chapatis/rotis alongside chopped onions and lemon wedges.
How to make Soya Mince from Soya Chunks
- Bring a litre of water to the boil in a deep sauce pan, to this add salt and then the soya chunks.
- Simmer for about 10 mins.
- Take off heat, and strain the water out of the soya chunks.
- Add the soya chunks to cold water. Keep immersed in cold water for about 5 mins.
- Now squeeze the water out of the soya chunks and make a coarse mixture in the blender.
- The soya mince is ready to use.
