carrots
peeled and grated
1
green chilli
de-seeded and chopped
2
spring onions
cut fine

tbsp
Roasted peanut powder
coarse powder will do

lemon
juice
Salt to taste

tbsp
Coriander leaves +stems –
washed, cleaned and chopped fine
Recipe Notes
Grate carrots and add to a salad bowl.
Add finely chopped spring onions, chopped green chilli, crushed roasted peanut and lemon juice.
Add salt to taste and tip in the chopped coriander leaves.
Toss the salad so everything is mixed up well and serve.
