Potatoes in a chilli and tamarind curry

Ingredients
  • 4large potatoesboiled, peeled and cut into cubes
  • 2medium onionschopped
  • 2tbsp Oilpreferably coconut oil but vegetable oil will also do
  • 1/2 cumin seeds
  • 1.5tbsp red chilli pwder
  • 1lemon-sized ball tamarind
  • Salt to taste
  • 1/3cup water
Recipe Notes
  1. In a heavy bottomed pan, heat the oil and add the cumin seeds to it and lightly roast till it splutters.
  2. Add chopped onions, sprinkle a little salt and sauté till the onions turn transclucent.
  3. Add chilli powder and stir well.
  4. Bring the water to the boil in another bowl, add the tamarind to the boiling water.
  5. Let this tamarind water boil for a few minutes until the tamarind and water form a paste.
  6. Add the boiled cubed potatoes to the onion chilli mixture and stir well. 
  7. Now add the tamarind paste to the potatoes.
  8. Add salt to taste, mix well and cover and cook for a few more minutes.
  9. Serve alongside steamed white rice and dal.
